Good: A vegetarian Thanksgiving in carnivores

No Turkey were harmed in the writing of this column.


In the last three weeks, New York Times's well blog holiday vegetarian and vegan recipes from an all-star team of chefs and food writer collected. The haul was delicious: see other crisp low fat Zucchini cake; Avocado and Grapefruit salad;Honey-roasted acorn squash, chestnut and Apple casserole;and a surprisingly simple chocolate pumpkin bread pudding with coconut milk instead of dairy products.


To non-vegetarians Thanksgiving without Turkey can sound like Ketzerei.Aber shifting your focus from the bird, the rest of the meal which can cook a surprising effect on both your eating habits and creativity.


"It makes for good food to reconsider and create dishes, vegetables, play an important role", said Michael Anthony, executive chef of Gramercy Tavern in New York City.


He has not created a vegetarian tasting menu at the restaurant - but, he stressed to win vegetarians.


"" There is no way, draw a niche market in the restaurant, nor is it designed so that an escape from regular food, "said Mr Anthony.""It's meant to be a celebration of vegetables and a large snapshot of what is available in the market and what grows in family businesses around our area."


Interest in vegetarian food is cooking wogenden among those who eat meat. "You can get rid of the idea of Turkey as the center of the meal," said Ms. Nathan, author of the new "quiches, Kugels and couscous: my search for Jewish cuisine in France" (Knopf).Vegetarian dishes, she added, "can stand alone."


Ms. Nathan said that you're still planning was Turkey this Thanksgiving, but serve, focusing on the inserts for more creative cuisine can make."The pages are where you can take risks," told me.


Under Ms. of Nathan's vegetarian holiday recipes an Apple parsnip soup, a baked squash "Cassolita" with caramelized onions and an Alsatian PEAR are ball with plums.


The vegan chef Chloe Coscarelli Los Angeles and most of her family had a Turkey-free Thanksgiving for the last 10 years.Each fall and her mother experiment with new meat-free dishes and work to "some of the traditional family favorites veganize".

Last week I got from a shopping tour with more than a week worth of food returned. except for a single package of chicken breast, my bags were filled, usually produce and grains. so far, have my daughter and I on a delicious Pan Mac and cheese plate, packed with broccoli, celebrated onions and mushrooms; roasted Brussels sprouts, bulbs, damsel a pie and parsnip and Apple Suppe.Wir have still plans to make an Indian spiced tasting butternut squash, Zucchini boats with Herb ricotta; and a unusual buckwheat-and black Kale Court created by Mr Anthony.Das chicken is now in the freezer because I haven't gotten cooking with it.
